In the early 1980’s, Italian bakers began to be concerned with the popularity of baguettes being imported from France. This thin French bread was starting to hurt the Italian bread makers business. Arnaldo Cavallari, began experimenting to make an Italian alternative bread to make sandwiches. In 1982, Cavallari introduced a new bread called ciabatta. This new bread is a broad, elongated flat bread that is unique for its alveolar holes. Ciabatta bread was an immediate success and Cavallari was hailed as the savior of the Italian bread industry.

All of us at Forseti Steel are huge fans of bread, cheese and wine (who isn’t?). For us, it is a show of respect to name this 10 inch hand-forged Damascus steel bread knife after Cavallari and his delicious ciabatta bread.

We designed our bread knife with an aggressive grind to help you easily slice through those delicious artisan breads. Whether you make your own sourdough or you have a favorite local baker, this bread knife will make short work of slicing through that tough crust. Plus, if you use a bread knife to slice tomatoes (gasp!) you won’t find a better serrated edge knife for this. We know lots of chefs frown on this, but it’s your knife, your tomato, your kitchen. You do you!

Beautiful, but doesn't work as a bread knife.

Has anyone at this company actually tried cutting bread with this knife? It tears. It does not cut. I'm being honest here. Was super excited about this knife and it won't even cut through a sourdough loaf. The teeth are too close to each other. Take a look at traditional bread knives - they have long open spaces between the teeth to allow the knife to dig into and move through the bread. Beautiful knife, but it needs another application besides cutting bread.
